Sushi Saint opens i-drive location this spring

Michelin star chef Michael Colantes brings his handroll brand to I-drive.

Icon Park will serve as the second location for Sushi Saint, the popular Creative Village Temaki concept of Collantes, and is set to open this spring.

“I’m excited to be in the I-drive area,” Collantes said. “This is a new district for us and a great way to showcase the talents of our local chefs here.”

The 3,000-square-foot restaurant has both indoor and outdoor seating for 150 guests.

Colant, who won a Michelin star in Soseki’s first eligible year in Orlando, has since earned honor. Sushi Saint was named for selection in 2024 as a recipient of Bib’s Gourmand.

“This is about serving locals and visitors looking for culinary excellence in I-drive and universal highway areas, whether it’s lunch or dinner,” said Icon Park Chris Jaskiewicz in a news release. “Just as Orlando has become known as a foodie destination, Icon Park has been increasing its own cooking games. We are proud that Chef Corantes has chosen Icon Park in its second location.”

Icon Park Sushi Saints serves many of the same high quality and innovative rolls, dishes and cocktails that locals enjoy original and original. The menu has some exclusive things special to the location.

In addition to Sushi Saints, Colantes’ current portfolio includes Soseki Modern Omakaze, Barcada, Perla pizza, Chez Lecquene and Taglish.

“It’s central to the tourism sector, so it’s going to be an interesting dynamic to see how you play here,” Collantes says. “And with everything that’s going on in the epic universe, there’s a lot of exciting things happening on that side of town, and we’re excited to be part of it.”
